Burgundy:
The Chablis region is the northernmost wine district of the Burgundy region in France. The grapevines around the town of Chablis are almost all Chardonnay, making a dry white wine renowned for the purity of its aroma and taste.
The northern location along the 48th parallel north places Chablis at the northern extremes of viable viticulture. The cool climate of this region produces wines with more acidity and flavors less fruity than Chardonnay wines grown in warmer climates.
The wines often have a "flinty" note, sometimes described tasting of gunflint, and sometimes as "steely". In comparison to the white wines from the rest of Burgundy, Chablis has on average much less influence of oak.
Most basic Chablis is completely unoaked, and vinified in stainless steel tanks. The amount of barrel maturation, if any, is a stylistic choice which varies widely among Chablis producers.
Many Grand Cru and Premier Cru wines receive some maturation in oak barrels, but typically the time in barrel and the proportion of new barrels is much smaller than for white wines of Cote de Beaune

They are 100% Chardonnay and almost have the samer terroir as the Blancs de Blancs (White Coast) of Champagne with chalky soil filled with oyster shells at certain levels. In fact in some of the cellars you can see these shells.
Itinerary
9:30am Arrive Village of Chablis (20 minutes from Auxerre) - Explantion of Terroir at the Orientation Table with a Panoramic View in the Grand Cru Vineyards facing South toward the Serein River.
10:30am 1st Tasting or 3 to 4 wines at a small exclusive producer where a sharp taste is the key to a good Chablis so the wines are fermented in steel vats.
If time your sommelier will take you to a wine seller in the the Village of Chablis for a comparison tasting
12:30 Lunch at Bistro des Grand Cru or Hostellier de Clos
14:00 Depart Chablis for your afternoon tasting session.

You take a picturesque driver to Prehy for a tasting on one of the larger Negociants.
Hear you will taste 3 or 4 more woody and round wines fermineted in Oak barrels as a contrast to the morning tasting.

Tasting of Red Wine in Irancy for those who are interested in tasting really good wine and not so concerned about the place.

Take the train from Paris. 90 minutes later you arrived and will be met by your guide. The morning will be dedicated to the discovery of Chablis vineyards and cellars where you eill learn about the famous wine production followed by a tasting.
After lunch you will driver through lovely landscape of Irancy and Auxerrois Vineyards with a tasting at Caves Bailly-Lapierre which produces the sparkling wine called Cremant de Bourgogne.
You will also learn such things like why the vines have European and American Origins, how the wine growers use oranic growing methods and how you fight spring frost.
